The tide goes in and out, in and out, leaving behind glassy pools, reflecting the summer sun. You hop from rock to rock, looking in each one, sometimes turning over a rock to see what’s underneath. In the pools there are colourful anemones, crabs scuttling sideways, small sculpins darting about, and tufts of seagrass swaying. In every pool, a treasure to be found.
This piece is part of a collection of six pieces written for a special, long-table dinner at House of Boateng restaurant in Victoria, British Columbia. After asking friends, family, and staff at the restaurant what they love about living on Vancouver Island, it was clear it was the special places; the beaches, the rainforest, the waterways through the forest, the Garry Oak meadows, the rose gardens and the tidepools found along the rocky parts of the coast. Each piece was performed at the dinner, followed by a dish inspired by, and using ingredients from, each of those places.
